  • Mary's Carmel Corn

    Mary?s Carmel Corn

     

    Pop:           1 cup of raw popcorn kernels

     

     

    Combine:   1 cup butter

                      2 cups brown sugar

                      1/2 cup corn syrup

                      1tsp. salt

    In a heavy saucepan, heat and stir until boiling. boil with out stirring for 5 minutes.

    Stir in 1tsp. vanilla and ? tsp. baking soda.

     

    Toss well with popped corn until all pieces are coated. Spread on 2 large un-greased shallow baking pans 

     

    bake in 250? oven for 1 hour. Cool and break apart.

     

     

  • Mary's Shepherds Pie

    Mary?s Shepherds Pie

     

    Topping:

             Cook and mash about 1 and ? lbs of Potatoes.

             Add garlic to taste

             1cup cottage cheese (drained) or ? cup sour cream

     

    Base:

             Fry onions, and garlic add to previously fried 1lb. ground beef that has    been drained.

             Add 1tablespoon ketchup, 2tablespoons flour,

             ? cup beef broth, carrots, and peas. Cook until done. 

     

    Place in casserole and top with Potato Mixture. and place under broiler till topping is lightly browned.

     

    Note: You can use any veggies, celery, parsley etc and use different spices if you wish like Italian seasoning or oregano.

     

  • Angela's Rice and Black Bean Salad

    Rice and Black Bean Salad

     

    1/2 c. pearl barley uncooked

    1/2 c. brown rice uncooked

    1 can black beans, drained and rinsed

    1c. frozen or canned corn

    1 red pepper, seeded and diced

    1/2.c green onions, sliced

    1/4c. parsley, chopped finely

     

    Dressing:

    1/3c. red wine vinegar

    1/3 c. olive oil

    1 clove garlic, pressed

    1 tsp. chilli powder

    1/2 tsp. salt

    1/4 tsp. black pepper

    1/4 tsp. chilli flakes

     

    Cook barley and rice (cook with 2c. water for 45 minutes).

    Let cool completely.

    In a serving bowl combine barley, rice, thawed corn, black beans, green onions, red pepper, and parsley.

    In a separate small bowl whisk together all dressing ingredients. Pour over salad 1 hour before serving. Stir again before serving. Enjoy!

  • Sweetened Condensed Milk

    Ingredients:

    1 cup skim milk powder

    2/3 cup white sugar

    3tablespoons butter

    1/4 cup boiling water

    Method:

    Put powdered milk in a saucepan with sugar and butter.  Pour boiling water into pan and stir to disolve sugar and milk.  Bring to a boil while stirring.  Remove from heat and let cool.  Use in all recipes that call for 1 can of eagle brand sweetened condensed milk.

  • Mary's Lentil Salad

    Cook 1 cup lentils in 4 cups of water, 1 and 1/2 teaspoon salt and 1 bay leaf.  Drain and chill.

    Add: 1 cup of each diced green and red peppers, diced tomatoes, 5oz. of havarti cheese (diced small) 1 tbsp. of tyme or oregano.

    Dressing: 1/4 cup of olive oil, 2tbsp. wine vinegar or lemon juice, finely minced clove of garlic.

    Mix all together and chill to allow flavours to penetrate. 

    Mary brought this to one of our church pot luck luncheons, and it was terrrific!

     

  • Western Round-Up Huge Success

    This past weekend's Western Round-Up was a huge success! Thank-you to all who worked so hard to make it such a wonderful and fun time not only for our church family, but also for the number of people from the community who dropped by.  The idea was right on, the food was great, the pony rides for the kids were smooth and yes, the square dancing was a hoot.

  • Susan's Morning Glory Muffins

    Susan?s Morning Glory Muffins

     

    Into a large bowl mix:

    2 cups all purpose flour

    1 ? cup white sugar

    2 tsp baking soda

    2tsp. cinnamon

    ? tsp. salt

     

    Stir In:

    2 cups grated carrot

    ? cup raisins

    ? cup nuts

    ? cup coconut

    1 apple, peeled, cored and grated.

     

    In a separate large bowl beat:

    3 eggs

    1 cup salad oil

    2 tsp. Vanilla

    Stir in flour and fruit mixture until batter is just combined.  Spoon into well greased muffin cups; filling to the top.  Bake at 350? for 20 minutes (makes about 14 medium size muffins.

     

     

  • Susan's Orange Date Muffins

    1 whole orange

    ? cup orange juice

    ? cup chopped dates

    1 egg

    ? cup butter or margarine

    1 ? cup all purpose flour

    1 tsp salt

    1 tsp. baking soda

    1 sp. baking powder

    ? cup white sugar

     

    Method:

    Cut the orange into pieces to remove steeds.  Drop pieces into blender with ? cup orange juice and whirl until peel is finely chopped.  Drop in the egg, dates, and butter and give the blender a short whirl.

    Stir together the dry ingredients, pour orange mixture over and stir only until moistened.  Bake at 375? for 15 ? 20 minutes.  

    (You can substitute raisins for the dates.)

  • Lemonade Muffins

    Lemonade Muffins

     

    1 ? cup all purpose flour

    ? cup white sugar

    2 ? tsp. baking powder

    ? tsp. salt

    1 beaten egg

    1 ? 6oz. can frozen lemonade thawed

    ? cup milk
    1/3 cup cooking oil

    ? cup chopped walnuts.

     

    Method:

    Mix dry ingredients together.  Combine egg, ?  cup lemonade, milk, and oil.  Add to the dry ingredients and stir just until moistened.   Gently stir in nuts.

    Fill greased muffin cups and bake at 375? for 15-20 minutes or until done.  While hot from the over brush with remaining lemonade and sprinkle with white sugar.

     

  • Basic Muffin Batter

     

    Basic Muffin Batter or the Nothing Muffin

     

    1 Cup all purpose flour

    2tsp. baking powder

    1 tsp salt

    1 cup sugar

    1 cup milk

    1cup melted butter or margarine

    1 egg

     

    Method:

    Stir together dry ingredients.  Add melted butter and beaten egg to milk.  Add liquid ingredients to dry stirring only until moistened.  

     

    To this batter add anything you have in your cupboard ? fruit, chocolate chips, nuts etc.  Or add nothing and serve with jam or jelly.

     

    Bake at 375? for 15-20 minutes. Yields about 8 medium sized muffins.
